Introduction
This is insanely easy and makes a great side dish. It works for almost all root vegetables – carrots, sweet potato and parsnips are favourites.
Method
- Preheat oven to about 200C
- Cut your vegetables into desired shape – batons always work well. Try to make them as similar as possible to ensure they’re ready together.
- Place in a bowl with some olive oil and toss until all coated. Season with salt, pepper and herbs of your choice.
- Spread evenly on a baking tray and place in oven until browning and crispy. Turn every now and then.
